how can you tell if the thermostst is bad or the head ...

how can you tell if the thermostst is bad or the head gasket is blown?in my 89 gmc pickup i lost the heat and i added coolant fluid to the radiator and i let the engine warm up.when the engine got hot a tan looking fluid came out of the over flow.i didn't get any white smoke or water out of my exhaust.i was wondering if the thermostat could be stuck closed.the engine still runs great.does the thermostat go bad and remain closed?i would hate to junk it if the only thing wrong with it is the thermostat?i was wondering also if the water pump would cause this same problem?i need to know how to tell if the head gasket or thermostat is bad and how to tell without taking the motor apart.it was making a loud knocking noise through the raditor cap.the fluid that was coming out was tan and did not smell like oil or gas.please let me know soon
