Jimmy fuel/sensor trouble

I have a 1992 GMC Jimmy with 216,000 miles and the 4.3 liter Vortec engine. While i am driving, it sputters and misses until i rev it up. It sounds like it is flooding out. A guy told me it was the thermostat, because it only runs at about 150-160 degrees. I replaced the thermostat, and it seemed to work good for a little while, but 200 miles later it started doing the same thing. Others told me it was the plugs, fuel pressure regulator, oxygen sensor, heat temp sensor, all kinds of different things. I don't know where to start. I just want to know what you think it is, and what i should do as of to start changing stuff, or to take it to a auto mechanic and have it diagnosed. Thanks, Frank.
