what is a cam

i just brought a car and it was taking a lot of gas to go places (1986 oldsmobile cutlass v8 307) so i brought it to the shop and they said it had high performance cam in it. i dont real now much about car and i didnt want them to know that. they said for it to be properly tuned the cam has to be removed. what is a cam and what does it do?
